This is a quick dish similar to the sub sandwich
philosphy: you put just a little bit of meat and cheese
on the bottom for flavor, then load it on top with veggies.
Chop tomatoes, romaine lettuce, red peppers and red onions.
Open up a small can of chopped olives.
Lay a thin slice of roast beef on a tortilla. Sprinkle some
shredded or thinly sliced cheese on top and melt it for
a moment in the oven.
Top the meat and cheese with the veggies.
Top with a few little splashes of caesar salad dressing
and roll it up.
Serve on the side: cottage cheese with drained mandarin oranges
or pineapple tidbits.
This makes a filling and very tasty meal.
